Mason Jar Salad

Mason Jar Salads are a great way to increase your veggie intake! Try these 3 easy Mason Jar Salad recipes from Sunkissed Kitchen.

All recipes are to fill a 1 1/2 quart mason jar and make a salad for 2 people. Use smaller quart size jars and split the recipes between two jars if needed for single servings.

INGREDIENTS

Mediterranean 3 Bean Salad

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • 1/2 cup kidney beans rinsed and drained
  • 1/2 cup chickpeas rinse and drained
  • 1 cup chopped artichoke hearts drained
  • 1/2 cup Fruit Bliss Tomato Halves chopped
  • 1 1/2 cups green beans blanched and cut in 2-inch pieces
  • 1/2 cup roasted red peppers
  • 2 cups spinach

Tart Cherry, Quinoa and Zoodle Salad

  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1/2 zucchini spiralized or cut into strips
  • 1 cup quinoa cooked
  • 1/2 avocado cut into chunks
  • 1/2 cup Fruit Bliss Tart Cherries
  • 2 cups arugula
  • 2 tablespoons walnuts chopped

Summery Blackberry Fig Salad

  • 2 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 1/2 tablespoon honey
  • 1 tablespoon fresh mint chopped finely
  • salt and pepper to taste
  • 1 1/2 cups cucumber chopped
  • 1 cup blackberries
  • 1 carrot cut into curls or grated
  • 1/2 cup Fruit Bliss Figs chopped
  • 2 cups arugula
  • 2 tablespoons pistachios
  • 2 tablespoons feta cheese

INSTRUCTIONS

Mediterranean 3 Bean Salad

  1. Prepare a balsamic vinaigrette by adding balsamic vinegar, olive oil, lemon juice, and salt and pepper directly into the jar, and stir to combine.
  2. Layer vegetables in the order they are listed to ensure the salad stays fresh for up to 5 days.

Tart Cherry, Quinoa and Zoodle Salad

  1. In a jar, add lemon juice, tahini and olive oil. Shake well to combine, and season with salt and pepper to taste.
  2. Add dressing to the bottom of a mason jar, and then layer the ingredients in the order they are listed. This salad lasts 3 days refrigerated.

Summery Blackberry Fig Salad

  1. Add the lemon juice, white wine vinegar, olive oil, honey, and mint to a jar. Shake vigorously to combine, and then season with salt and pepper if desired.
  2. Add the lemon mint vinaigrette to the bottom of a jar, and then layer the rest of the salad ingredients into the jar in order. This salad will last 5 days refrigerated.
