This delicious and flavorful Moroccan Lentil & Chickpea Curry by Fit Slow Cooker Queen uses Fruit Bliss organic sundried tomatoes and dates for an exotic vegetarian / vegan meal.

Moroccan Lentil & Chickpea Curry (Vegan/Vegetarian)

INGREDIENTS

  • 1 cup lentils, rinsed
  • 15 ounces garbanzo beans, drained & rinsed
  • 3 1/2 cups low-sodium vegetable broth
  • 2.5 ounces tomatoes, chopped
  • 2.5 ounces, dates, chopped
  • 1/2 tsp ginger
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cinnamon
  • 1/4 tsp coriander
  • 1/4 tsp nutmeg
  •  1/4 tsp salt 

DIRECTIONS

  1. Add all ingredients to the slow cooker.
  2. Stir to mix well.
  3. Cook HIGH 2-3, LOW 4-6.
